Quinoa has been an extremely popular grain for in the past couple of years. It’s a little expensive for my everyday budget, though, so I don’t get to have it often. But when I do, my taste buds rejoice.
During the Davao Food Appreciation Tour 2015, we were invited to have lunch in Marco Polo Davao’s Polo Bistro. While everything was scrumptious, my highlight of the meal was the Quinoa Salad with Smoked Salmon and Green Asparagus.
It has light quinoa topped with alfalfa sprouts, beautifully pink smoked salmon, blanched asparagus, kesong puti (white goat cheese), fresh lettuce and sweet mangoes, and a balsamic dressing on the side. At first I tried tasting each part separately, and they were all delicious, but when I fit morsels of quinoa, alfalfa, salmon, cheese in one bite…oh, it’s glorious. Then we have the mangoes and lettuce to refresh the palate.
I must attempt to recreate this at home. (Not sure if I can make one such plate that’s up to Marco Polo standards, but we can always try.)
